A Summer of Grilling

Our rooftop is open! It is a highly anticipated event each year and even if it’s insanely cold we head up there every 1st of May. This year was no different but sadly the grills were filthy and it was crazy windy so I had to cook our steaks at home. Boo! However we’ve had some great weather since then and we’ve been grilling all sorts of concoctions. This month Patak’s challenged us to get our grill on and needless to say, I was up for the challenge!

IMG_6441Our rooftop is quite fun and friends love hanging out with us during the summer. Don’t worry, most of them also like hanging with us during the winters ;). With stellar views of the surrounding areas, a hot tub and BBQ grills it’s the perfect way to get the Little Monkey to run or bike around while we enjoy the warm weather.

I’ve already experimented with quite a few dishes but our favourite so far has been our Tandoori Burgers, grilled Mango Chutney Pineapple and Mango Chutney and Lime Pickle Prawns. As you can see I’ve had a hard time just picking one dish to share! The best part is that I was able to whip up this meal in less than an hour so it’s a very easy way to entertain when company swings by unannounced.

During the summer our freezer is stocked with homemade burgers and these newly discovered Patak’s Tandoori Burgers are going to devoured frequently. I like that the flavours are subtle and that I can still dress it up with my favourite toppings. In a bowl mix 1 kg of ground meat ( I like beef but this could work with chicken or turkey), two tablespoons of yoghurt and a pack of Tandoori Cooking Sauce for two. Technically speaking that’s all you need. If you’re feeling adventurous add in some dried onions, fresh garlic and a handful of cilantro. Shape your burgers and pop them in the freezer. I find that frozen burgers hold better on the grill and don’t crumble. Once grilled add your favourite toppings. As you can see mine are avocado, onions and lots of ketchup and hot sauce!

Grilled prawns are a favourite because they cook so quickly. I was literally dashing out the door when I tossed  a handful of frozen prawns into a ziplock bag with a tablespoon of Patak’s Sweet Mango Chutney, a tablespoon of Patak’s Lime Pickle and three tablespoons of orange juice. Shake it all up and toss on the grill. The longer you marinate the better it tastes!

 

 

IMG_6449I’ll be honest I made this for dessert but then tried it with a leftover burger and realized what a mistake I’d made! While absolutely delicious on its own, these Sweet Mango Chutney Pineapples are AMAZING on the Tandoori Burger! Take a can of Pineapple, take a third of the juice and add in three tablespoons of Patak’s Sweet Mango Chutney. Shake it all up and then add in the pineapple rings. When you grill the Pineapples, baste it with the sauce and ensure you get the chunks of Mango onto the grill as well. Lip smacking good!

 

If you’re looking for an easy BBQ-ed meal, this combo is bound to be a sure winner! Even the Little Monkey devoured the burger and prawns with her corn. I was shocked! Couldn’t get her to eat the Pineapple oddly enough!

    Yummy, I cook hamburgers year round using our George Foreman grills. Plus it releases a great amount of grease and fat. I’m hungry now. Your burgers look amazing too.

      We have a Hamilton Beach indoor grill and love it during the winters! And yes! Love that the grease just melts away – I find that burgers need medium vs extra lean meat so there’s always lots of grease in the end.

    We (hubby) grills all year long sometimes in 60cm snow drifts. There is nothing like the taste of BBQ
