I now I have to feed four bellies and I”m always trying to figure out combos that will satisfy the kids and the hubs when it comes to meals. Baby Boy is a voracious eater and he likes things spicy, Little Monkey wants things sweet and of course the hubs and I want insane spice! The Food Bloggers of Canada recently sent us a sample of Pulo Cuisine’s range and I was eager to test them out. Ever since our visit to Lamesa I’ve been trying to explore Filipino cuisine at home and I must admit that Pulo makes it easy to whip up a delicious meal.

Pulo is an authentic collection of sauces and marinades inspired by the 7000 islands of the Philippines and I used the Mango Chili marinade to get not one, but two meals! I must admit that the marinade bottles do go a long way as it has a powerful punch of flavour. I received the entire range and had already sampled the Lemongrass one a few months ago as one of my impulse grocery purchases (and loved it) so I gravitated towards the Mango Chili marinade which is influenced by the Guimaras Island, famous for producing the world’s sweetest mangoes. The mango flavour is definitely upfront and you can tell that Pulo is proud of their mango flavour. My dad had some leftover curry a few days later and he too mentioned how amazing the mango flavour was. It’s hard to find mango sauces that offer full-on flavour and this one is going to be in our repertoire for a good while. Don’t worry, there are chili flakes and a good level of spice but it isn’t crazy hot.
I not only got Mango Chili Chicken Curry but also Mango Chili Chicken Sandwich out of the one bottle … chicken two ways! Both dishes were devoured and whipped up in no time. Especially the sandwich which I had to make in a bit of a hurry when a friend visited us for lunch.
Mango Chili Chicken Sandwich
This was easy as all I did was marinate two chicken breasts with three tablespoons of the Pulo Mango Chili Marinade (should do this over night but I only had half an hour and it worked out fabulously) and then sauteed it in a frying pan until fully cooked. I then shredded the chicken and mixed in two tablespoons of mayo and a teaspoon of the Pulo Mango Chili Marinade. I then quickly sprinkled some pepper and then placed the mixture in-between two slices of Rye bread. Delicately placed some spinach leaves and then enjoyed it with a Peach cider and some corn! Told you it was easy!
Mango Chili Chicken Curry
The moment I tasted the chicken sandwich I knew I had to try this in curry form. Given that Baby Boy also enjoys curries I chopped up three chicken breasts and poured in half a bottle of the Mango Chili Marinade. I had these all in a saucepan (so as to lessen the dishes that I had to wash at the end of the day ;). While this marinaded …for ten minutes (why am I always rushed?)… I chopped up an onion and tossed it into the pan. Turning the heat to medium I let it all cook before pouring in a can of coconut milk. Added a quarter cup of milk and threw in a handful of broccoli before letting it cook for another 15 minutes and voila! Dinner was ready. Adding in veggies last minute has become my new thing. The hubs and I also added some hot sauce to our meal and I rinsed the chicken out very quickly for Little Monkey. Baby Boy enjoyed the chicken pieces (without the curry) and devoured it with his white rice.
Can you see how easy it is to cook with flavourful marinades and sauces? Pulo Cuisine is looking for some ambassadors and I for one am throwing my pots and pans in air, in hopes of being chosen as one. Fingers crossed and lips smacked – I’m ready!
